Facility is currently cooling pulled pork, chicken, pastas, and potatoes (for cold salads). Discussed proper cooling methods and distributed cooling fact sheet during inspection. Recommended dedicated refrigeration unit for cooling to ensure kitchen refrigerator is able to maintain proper temperatures.
