Hot holding appropriate, mashed potatoes, lobster bisque, French onion soup and mushroom soup on steam table all between 169F and 175F. Pulled pork at 175F. Cold holding appropriate, cooked pastas 41F, haddock 40F, calamari 40F, blue cheese 39F, chopped tomatoes 39F, lobster bisque 40F, mushroom soup 39F. Discussed cooling procedures that are followed to cook and cool soups. Once prepared, soups are first put into smaller containers and cooled to 45F before being put into 22 quart containers. Facility is clean and well maintained. |Building next door, Old Homestead, has a bar but no kitchen, and is also used for seating. No food prepared in building.
