Inspector’s comments

No hot holding at time of inspection. Kitchen staff in process of cooking and preparing food items for tonight’s dinner (prime rib, chicken, macaroni and cheese, baked potatoes, seafood chowder, salad bar items, etc.). Proper hair restraint and glove usage observed. Staff restroom is clean. Julie (head cook and kitchen manager) has implemented many procedures to ensure kitchen is clean and well maintained, and there have been significant improvements in regards to the cleanliness of facility. Proper thermometers onsite to measure food temperatures.
