All cold holding temperatures appropriate at 45 degrees F or below at the time of inspection|All hot holding temperatures appropriate at 140 degrees F or above at the time of inspection |Lunch food being processed and repurposed while breakfast service being conducted. Prioritize food protection and safety.|Cooling of food products should be done rapidly and in sizes/amounts that will be able to go from 140 degrees F to 70 degrees F in two hours and 70 degrees F to 45 degrees F in the following four hours (total of six hours)|Reheating of food products should be done rapidly and in sizes/amounts that will be able to meet the required heating curve|All washing must go through the commercial dishwasher in order for the current Wash-Rinse-Sanitize system to be maintained |No changes have been made to the back room yet. There are currently 10 chairs and two tables, but nothing is set up for service.
