Class for the day is sandwich making. No hot holding at the time of inspection. Walk-in cooler functional chicken breasts 42F, chicken wings 40F. Walk-in freezer functional. Bakery refrigerator fucntional ambient air temperature 43F. Dry goods storage area is clean. Facility is overall clean and organized. Proper hair restraint and glove usage observed.
