Cold holding appropriate in walk-in, sliced tomatoes 40F, macaroni salad 43F, rice 43F, pasta 43F, coleslaw 42F. Cold holding temperature in prep unit appropriate, chopped tomatoes 40F, sliced tomatoes 39F. Cold holding in pizza prep unit appropriate, chicken wings 42F, cooked cubed chicken 41F.
