All cold holding temperatures appropriate at 45 degrees F or below at the time of inspection|All hot holding temperatures appropriate at 140 degrees F or above at the time of inspection |Four, approximately 5-gallon tubs of tomato sauce, uncovered, and with frozen sauce bricks inside, prepared within the hour, in the process of cooling, were observed to meet the cooling curve (120 degrees F to 70 degrees F within the first two hours and 70 degrees F to 45 degrees F within the next four hours - total of six hours)
