Inspector’s comments

Crock pot of approximately 5 cups of chili at 120 F at 12:50 pm. Had been in crock pot for approximately 20 minutes. Temperature now at 181 F at 1:30 pm. Chili is pre-packaged, but leftovers are stored in refrigeration unit in kitchen. Sign on refrigeration unit door states �refrigerate leftovers within 2 hours of serving to prevent bacteria from growing�. Spoke with employee and he says that they were unaware of the cooling curve and proper cooling times. I provided a printout of the cooling curve and discussed it with the employee. Cold holding appropriate, milk 40F, butter 42F, and dessert 39F. Facility is clean and well maintained.
