Inspector’s comments
Taco night menu consists of ground beef, cubed chicken, and rice in a holding unit. Cook rapidly heated the meat in the microwave before placing in hot holding unit. Food products that will be reheated need to be brought up to 165 degrees F before served or placed in hot holding. The electrical hot holding unit is not a sufficient source of rapid reheating.|All cold holding temperatures appropriate at 45 degrees F or below at the time of inspection.|Facility is replacing freezers and refrigeration equipment in the next coming months.
