1) Reviewed complaint with owner at time of inspection. |2) Reviewed cooling practices as observed and found to be accurate at time of inspection. Discussed utilizing cooling wands/paddles for liquid items, cooling uncovered, less than four inches in depth. Pasta reportedly receives cold water shock. Prime rib observed cut down to smaller portions. Cooling fact sheet distributed to reinforce good cooling practices with new staff. |Facility cools the following items: Prime Rib, Pastas, Soups, Fully cooked Chicken Wings.
